Quick Pickle Cucumber Relish

I am very lucky, and have very giving neighbors who gift me veggies from their garden. As I am pretty much the only one who loves cucumbers in my family, this is a great way to use up all those delicious pickles in waiting. This Quick Pickle Cucumber relish is a great and FAST way to get that Bread and Butter pickle flavor in a flash. I love to add this to my Tofu “Egg” Salad. Combine it with your favorite mustard, and VOILA, you have a delish topping for your Black Bean Burger or Carrot Hotdog! YUM!

Quick Pickle Cucumber Relish

This Quick Pickle Cucumber relish is a great and FAST way to get that Bread and Butter pickle flavor in a flash. I love to add this to my Tofu "Egg" Salad. Combine it with your favorite mustard, and VOILA, you have a DELISH topping for your Black Bean Burger or Carrot Hotdog! YUM!

  1. Add all the ingredients to a mixing bowl and mix well.
  2. Taste to make sure it is sweet or tangy enough for you. Add more Maple Syrup if you need it sweeter and more Vinegar if there isn't enough tang.
  3. Store in an air-tight Glass container in the fridge for up to one week.
