I am very lucky, and have very giving neighbors who gift me veggies from their garden. As I am pretty much the only one who loves cucumbers in my family, this is a great way to use up all those delicious pickles in waiting. This Quick Pickle Cucumber relish is a great and FAST way to get that Bread and Butter pickle flavor in a flash. I love to add this to my Tofu “Egg” Salad. Combine it with your favorite mustard, and VOILA, you have a delish topping for your Black Bean Burger or Carrot Hotdog! YUM!

Ingredients
- 1 Medium Cucumber Finely Chopped
- 1/4 cup Finely Chopped White Onion
- 2 tbsp Maple Syrup
- 1 tbsp Apple Cider Vinegar
- 1 tbsp White Wine Vinegar (can use Apple Cider instead)
- 1/4 tsp Garlic Powder

Instructions
- Add all the ingredients to a mixing bowl and mix well.
- Taste to make sure it is sweet or tangy enough for you. Add more Maple Syrup if you need it sweeter and more Vinegar if there isn't enough tang.
- Store in an air-tight Glass container in the fridge for up to one week.
